How is it made?
Our Blanc de blanc from Orange
Made from 100% Chardonnay grown at Word of Mouth in Orange, NSW, at over 1,000 metres elevation. The fruit was harvested on 6 March 2018 and fermented naturally with 100% wild yeast in old oak barrels. The wine was blended in November 2018 before being bottled for secondary fermentation in January 2019.
It then spent more than five years ageing on lees before being disgorged in July 2024. Finished with a minimal dosage of just 2 g/L, allowing the wine’s natural freshness, texture and complexity to shine.
